INGREDIENTS: * 5-6lb roast of bear * 1/2cup vinegar * 3 strips thick bacon or salt pork * 1 large onion, sliced * 3 tbsp butter, salt, pepper, water DIRECTIONS: 1. Trim all fat from roast and wash in cold water. 2. Soak roast for 2 hours in 4 cups water with one tbsp salt and 1/2cup of vinegar, remove and pat dry. 3. Place meat in a roasting pan, lay strips of bacon or salt pork on top of roast then spread onion slices on and around roast. 4.Roast at 350F for approximately 3 hours. 5. 1/2 hour before serving, remove bacon strips, coat top of roast with butter and sprinkle with salt and pepper. 6. Cook 15minutes more, basting with hot butter 3 or 4 times during this time.
