Fancy Fried Bass
INGREDIENTS: * 1 1/2lbs smallmouth bass fillets * 1/4tsp salt * 1/8tsp pepper * 1/2cup flour * butter or margarine * 1cup or more sliced fresh mushrooms * 1/4cup green onions * 2 tbsp dry white wine * 1tbsp lemon juice DIRECTIONS: 1. Place the flour on a plate. Sprinkle fillets with salt and pepper, then dredge lightly in flour. 2. Melt about 2 tbsp butter or margarine over medium heat. 3. Fry the fillets until golden brown on each side and remove to a plate, keeping them warm. 4. If necessary add more butter or margarine to the skillet and add mushrooms and green onions. 5. Cook them for about 3 minutes then stir in the wine and lemon juice. 6. Pour this mixture over the fish and serve.
