Good Grouse Soup

INGREDIENTS: * 2-3 grouse, cut into serving pieces * 1/2lb salt pork, cubed * 4 medium onions, chopped * 1tsp salt * 1/2tsp pepper * 2tbsp butter * 1/2lb stew meat, cubed (beef or moose) * 3 quarts water * 1cup celery, chopped * 2tbsp butter * 4 pieces fried white bread DIRECTIONS: 1. Melt butter in a frying pan and add salt pork and onions. Cook until onions are golden brown. 2. Place grouse pieces in a large pot and add pork and onion mixture. 3. Place cubed stew meat on top and add salt,pepper, and water. 4. Bring to a boil, then lower heat and simmer for 2 hours. 5. Remove bird pieces to a platter, set aside. Cook soup for another hour. 6. Remove from heat, add celery and simmer for 15 minutes. 7. Fry 4 pieces of white bread in 2tbsp butter until golden brown on both sides. 8. Cut each piece of bread into 4 pieces and place in a large coup bowl, transfer the bird pieces to the bowl and pour soup over the bread and bird.
